  • 1 large red bell pepper, diced
  • 1 cup carrots, diced
  • 1/2 red cabbage, shredded
  • 2-3 scallions, thinly sliced
  • Peanuts or cashews (optional)
  • Nut butter dressing (buy from the store or make your own)

Directions

  1. In a large mixing bowl, combine the quinoa, red bell pepper, carrots, red cabbage, scallions, peanuts or cashews, and nut butter dressing.
  2. Spoon into individual bowls and serve!
