Ingredients
    • 1 lb. Fully Cooked Quinoa
    • 3 tbsp. olive oil
    • 14 oz. mushrooms, quartered
    • 3 tbsp. garlic, minced
    • 1/2 onion, chopped
    • 10 oz. fresh spinach
    • 2 cups low-sodium vegetable broth
    • 1 tbsp. Italian seasoning
    • Pepper to taste
    • 1 cup parmesan cheese, grated
    • Kielbasa (optional)

Directions

  1. Heat olive oil in a large skillet. Add the quartered mushrooms and sauté for about 5 minutes until browned.
  2. Add the chopped garlic and cook for about 30 seconds longer. Then, add in minced onion and cook until translucent.
  3. Stir in vegetable broth, Italian seasoning, and spinach. Cook until spinach is wilted.
  4. Stir in quinoa and top with parmesan cheese and Kielbasa (optional). Enjoy!
