Thai Citrus Chicken Salad

Ingredients

  • 2 C. Fully Cooked Grilled Chicken Breast, diced
  • 1 C. Napa cabbage, shredded
  • 1 C. red cabbage, shredded
  • 1 C. carrots, shredded
  • 1/4 C. green onion, minced
  • 2 large cloves garlic, minced
  • 1 T. fresh lime juice
  • 1 T. fresh orange juice
  • 1 T. fish sauce
  • 1 t. rice vinegar
  • 1 t. olive oil
  • 1/4 C. cilantro, chopped
  • 1 t. sugar
  • 1/2 jalapeno, minced
  • salt & pepper
  • lemon zest

Directions

  1. Pour olive oil, garlic, lime juice, orange juice, fish sauce, rice vinegar, and sugar into a blender and pulse until emulsified.

  2. In a large bowl, mix diced chicken, cabbage, carrots, green onion, jalapeno, zest of one lemon and cilantro.

  3. Toss with dressing mixture, salt and pepper to taste. Serve with a fresh lime wedge.
