Garlic Mushroom Quinoa

An easy, healthy side dish that you’ll want to make with every single meal!


  • 1 C. Sandridge Fully Cooked Quinoa
  • 1 T. olive oil
  • 1 lb. cremini mushrooms, thinly sliced
  • 5 cloves garlic, minced
  • 1/2 t. dried thyme
  • salt and pepper to taste
  • 2 T. grated Parmesan for garnish


  1. Add mushrooms, garlic and thyme, and cook, stirring occasionally, until tender, about 3-4 minutes.

  2. Season with salt and pepper to taste.

  3.  Stir in cooked quinoa until well combined and heat through. Serve immediately, garnished with grated Parmesan.
