Beer Cheese Bowties

Gooey and rich, with crunchy breadcrumbs and salty bacon.


  • 4 C. Fully Cooked Bowtie Pasta
  • 2 oz. bacon bits (with some reserved for topping)
  • 1/2 C. italian bread crumbs
  • 1/8 t. black pepper
  • 1/2 t. paprika
  • 16 oz. shredded cheddar or Colby jack cheese
  • 12 oz. of amber ale
  • 2 cups milk
  • 4 T. butter
  • 4 T. flour
  • parsley, for garnish


  1. Preheat oven to 375 F and then in a large saucepan, melt the butter over medium-high heat.

  2. Once the butter is melted whisk in flour. Cook until the mixture is bubbly and golden in color, about 2-3 minutes.

  3. Whisk the mixture while adding milk and beer.

  4. Then add cheese and stir until melted. To thicken cheese sauce, let the mixture come to a low boil , stirring frequently. Simmer for about 5 minutes.

  5. Add pepper & paprika, then pour mixture over bowties and into a greased casserole dish, add bacon and stir.

  6. Top with bread crumbs. Bake for 30 mins. Remove from oven, sprinkle with parsley and remaining bacon bits. Enjoy!
