Antipasto Zucchini Boats

Low carb and delicious!


  • 1 lb. Antipasto with Meat & Cheese
  • 2 C. Old World Marinara Sauce
  • 3 zucchini
  • 12 thin slices provolone cheese
  • 1 T. olive oil
  • salt & pepper
  • Fresh chopped basil


  1. Drain liquid from antipasto then combine with marinara in a large bowl.

  2. Slice zucchini in half lengthwise. Use a spoon to scoop out seeds and some of the zucchini flesh to create your boat. Brush with olive oil and sprinkle with salt and pepper.

  3. Place zucchini halves on a baking sheet lined with parchment paper. Fill boats with antipasto/marinara mixture, top with provolone and basil.

  4. Bake until zucchini is tender and cheese is melted, approx. 10-12 mins.
