Garlic Mushroom Quinoa

Ingredients

  • 1 cup Cooked Quinoa
  • 1 Tbsp. olive oil
  • 1 lb. cremini mushrooms, thinly sliced
  • 5 cloves garlic, minced
  • 1/2 tsp. dried thyme
  • salt and pepper to taste
  • 2 Tbsp. grated Parmesan for garnish

Directions

  1. Add mushrooms, garlic and thyme, and cook, stirring occasionally, unil tender, about 3-4 minutes.

    Season with salt and pepper to taste.

    Stir in cooked quinoa until well combined and heat through. Serve immediately, garnished with grated Parmesan.
